I'd like to offer the ability for all employees (independent of involvement in a process) to be able to see a specific instance's status using K2 Workspace's viewflow page.  I know to do this I'll probably have to utilize the management library and run as an admin.  Any ideas on if this can be done, while leveraging K2's existing viewflow graphical representation?

You should just have to grant everyone View rights on the process. That will let all users view the details of all process instances, regardless of if they have participated in the process instance or not (View Part rights will let users see process instance details only on instances they have participated in). This will grant people access to the details in the built in reports, including View Flow.
